What's a good substitute......?

The cornmeal is only for dusting the ravioli to keep them from sticking after you've fashioned them so you don't have to use it. You can coat them in regular flour instead, or place them on a lightly oiled sheet pan or parchment paper or waxed paper instead. Make sure you don't stack them, put them in a single layer only.
